Ingredients

  • 2-3 lb bottom round beef roast (lean)
  • 1 cup low sodium beef stock
  • 3 tablespoons of Italian Seasoning
  • i jar of peperoncini rings

Directions

  1. Place roast into the slow cooker.

  2. Mix 1 cup low sodium beef broth and Italian seasoning and add to slow cooker.

  3. Cook on low for about 8-10 hours.

  4. One hour before it is done add the peppers!  Serve on top of a salad or in lettuce wraps!
